This is a comforting, quick, easy soup recipe which can be made using almost any store cupboard ingredients. We always have red lentils in the cupboard as a base for many dishes. They are perfect for soup as they cook so quickly and are full of tasty goodness. The recipe couldn’t be easier and can be made on the hob or stove.
Ingredients:
I cup lentils
1.5 cups finely diced veg (e.g. onions and any root veg you have)
3 cloves garlic
1 bay leaf
3 cups stock
1tsp mustard seeds
Black pepper
Olive oil
Method.
Sweat the onion in olive oil until soft.
Add garlic and other veg and cook for a few minutes.
Add stock, mustard seeds, bay leaf and any seasoning you wish.
Bring to the boil then turn down the heat and simmer on the hob or pop on the top of the stove until lentils are cooked and the veg is soft. This can be as quick as 30 mins on the hob or if the stove is really hot. We tend to add a little extra water then leave it on the stove until needed - often 2-3 hours and the flavour seems much better.
You may want to mash the veg with a fork or potato masher or blend the soup if you prefer a smoother texture. If the soup seems a little thick, add more stock or water to taste.
