This is the perfect recipe for boaters. As long as you have flour on the boat you can easily make a bread to accompany a casserole, curry or chilli, or made larger and thinner these will make perfect wraps to use up leftovers from salads for a delicious cheap lunch.
They can also be topped with tomatoes, onion, olives or cheese etc and grilled as a quick pizza substitute. Experiment with quantities and fillings and you will never need to buy another flatbread.
Ingredients:
100g Plain or Bread flour
125ml water
Salt
1tbs Olive oil
Method: Add the salt and olive oil to the water and mix together vigorously with a fork to blend Add enough water mix to the flour to form a very soft dough. Cover the bowl and leave to rest for 30 mins. Split the dough into 2 or 3 portions as required. Form into balls and roll out on a floured surface. Leave the dough thicker for flatbreads or roll thin for wraps. Lightly brush a heavy based frying pan or skillet with oil and cook the breads for two or three minutes on each side until bubbles form and they are cooked through. Enjoy as an accompaniment to a curry or chilli or fill with your favourite ingredients and roll into a wrap as a light lunch or snack
