Simple Tea Loaf

Old Fashioned Tea Loaf


Rich loves cake and a day without cake on our boat is a sad day. This recipe is perfect for boaters as it only requires six ingredients which are usually in our store cupboard. It can be eaten on its own or served buttered.

Ingredients

1 cup strong Earl Grey tea

1 ½ cups dried fruit

½ cup sugar

1 tbsp jam/marmalade

1  and 2/3 cups self raising flour

1 tsp mixed spice or cinnamon


Method

Soak the fruit in the tea for at least 2 hours or preferably overnight.


Preheat oven to 160°c or gas mark 3

Line a 2lb loaf tin


Mix the soaked fruit and tea with sugar, marmalade/jam, flour and mixed spice and stir really well. 


Tip into the prepared loaf tin and level the top


Place in the middle of the oven and bake for 1 ¼ hours or until a skewer (or sharp knife) inserted in the top comes out clean and dry. Check after 1 hour.


Remove from tin and cool for 30 mins.
